Why is my ingredient called Candy - Chocolate - M&Ms Peanut?

Because you filed it that way. When you add or edit an ingredient you pick a Type and a Sub-Type, then give it your own name, and the three read together. Both boxes are optional. Anything you added before this stays as you typed it.
